I just kicked the habit myself (4+ cups per day). A technique called “caffeine fading” works well. You cut back by a half cup every couple of days. It worked fine for getting off the addictive part of the habit. I found that I still wanted something to drink at my desk. Decaf or hot cocoa make good substitutes for that part of the craving.
The reason I quit was because I used to get withdrawal headaches on the weekends. Really annoying.
This might also help with the staying up late thing. Caffeine has a half life of many hours.
I wouldn’t be surprised if there was a two birds/one stone situation with the caffine and the sleep. I’ll definitely give the hot cocoa a go; the morning hot drink ritual is a major part of why I pound so much coffee every day.
